Germany’s sushi master comes from Thailand

High art. Mongkol Patprom from the Mangostin restaurant in Munich is Germany’s first sushi master. In September 2015 he won the German preliminaries held in Hamburg of the Global Sushi Challenge, the world’s biggest sushi competition. He finished in the top five at the grand final in Tokyo in November. Mongkol Patprom grew up in the northeast of Thailand and began an apprenticeship at a Japanese restaurant in Bangkok when he was seventeen. He learned there the high art of preparing sushi over a number of years – until he was discovered by Joseph Peter, head of the Mangostin. A key factor in sushi preparation is speed. In the Hamburg event, Mongkol Patprom won by almost half an hour.
